Growing up, Spanish style hot chocolate was our preferred snowy day beverage. When I moved out of my parents’ home to attend college, my dad passed on his recipe for a rich cup of chocolate:
- In a 12 or so oz mug, mix 1 tablespoon cocoa, 1.5 tablespoons sugar and about 2 tablespoons corn starch (can be adjusted depending on thickness desired).
- Add just enough hot water to dissolve the ingredients before filling the rest of the mug with milk.
- Microwave the cocoa for 1-1.5 minutes, stir, and then continue microwaving it in 30 second increments (stirring between) until it thickens.
If you can get churros to dunk in it, all the better!
