I’ll confess it: I’ve got quite a summertime obsession with basil and tomatoes (preferably paired with mozzarella). You, too? Let’s be friends!
This variation on a grilled cheese sandwich is a testament to that obsession–and one of my favorite results of acting on a hunch:
Simply layer pesto (or finely chopped basil leaves mixed with olive oil), mozzarella (or other italian cheese, or a combination thereof), spinach, more cheese, thin slices of Roma tomato, and a bit more cheese between slices of bread. Toast in a skillet as you would a normal grilled cheese sandwich until the cheese is all melty and the bread is nicely toasted.
